The most common form of molasses is sugarcane
molasses. Jaggery is basically a type of unrefined
sugar. It is prepared by boiling sugarcane juice
until it solidifies and then pouring it into blocks.

Jaggery:
Jaggery is a natural form. We all eat it, but when
we collect more sweeteners by adding chemicals, the
sweetness increases in the sugar. For this reason,
the numbers of calories in sugar also increases,
while the risk of side effects remains. Nowadays,
the white/yellow jaggery that is made or available
in the market contains high amounts of baking soda,
sodium hydrosulphite (hydrous), sulphur and
chemicals which are not good for your health.
Gaumantra Jaggery: The difference between
normal jaggery and GAUMANTRA jaggery is that
GAUMANTRA jaggery is made from natural cow based
agriculturally sugarcane. It contains all the minerals
and vitamins and no chemicals are used to make it.
